Sterling Caviar owns and operates four white sturgeon farms located in Elverta, Wilton, Elk Grove, and Ione, CA. The water from our farms comes from the California foothills, supplying pristine water used to tend to our family of stock. Our broodstock dates back over 30 years.
We stand behind all our products with full traceability – from our farm to your table. Our aquaculture and processing meet the standards for legal international trade in caviar and sturgeon products. We hold a current import/export permit and adhere to the requirements of the Convention on International Trade in Endangered Species (CITES) in all our export transactions. In addition, our caviar and meat are harvested and processed at our Elverta farm under exacting and controlled conditions in accordance with an active Seafood HACCP (Hazard Analysis Critical Control Point) Plan and our facility is an establishment approved by the USDC Food Inspection Program.
