Sterling Caviar owns and operates four white sturgeon farms in Sacramento, California. The water for our farms comes from the California Foothills, supplying pristine water used to tend to our family of stock. Our broodstock dates back over 30-years.
In 1983 we became the first commercial sturgeon farming operation in California. The began the 6.5 to10 year process of spawning broodstock.
During the period of 1988 to 1994, the process for raising our world-famous white sturgeon at our aqua farms, utilizing sustainable farming practices, was refined with tank reconfigurations and the fish begin producing caviar. Sterling became the first in the world to have produced commercial quantities of caviar from tank-raised sturgeon.
Today, Sterling Caviar is the leader in sustainable white sturgeon farming and sturgeon caviar production.
Sterling Farming Standards
Sterling Caviar stands behind all our products with full traceability, from the farm to your table. Sterling aquaculture and processing meet the standards for legal international trade in caviar and sturgeon products. We hold a current import / export permit and adhere to the requirements of the Convention on International Trade in Endangered Species in all our export transactions.
Our caviar and meat are harvested and processed at our Northern California farm under exacting and controlled conditions in accordance with an active Seafood HACCP (Hazard Analysis Critical Control Point) Plan. Sterling maintains current registrations with all required federal, state, and local authorities for food processing. Our facility is an establishment approved by the USDC Seafood Inspection Program.
